Some of the more valuable cars are sold at auction like Barret Jackson
You got to remember that this is a movie. Fiction. Fantasy. Looks can be deceiving.
They may have several cars of the same car used in the movie, each configured for a different purpose.
Some may have the interior decked out for interior scenes, however the exterior and drive train of this vehicle may only be marginal.

A lot of the high performance items on the car are usually non functional props that don’t do anything.
They may have some cars configured for stunt work. These will usually get heavily damaged during filming.
They may have one copy of the car that is a show car. This one will be really nice. This is the type that may get sold at an auction like Barret Jackson.

Cars used in movies are rented from companies that supply Hollywood with vehicles for TV and films. They are no different then the sofas and lamps you see on the movie sets or the clothes the actors wear during a specific scene.
When they are done with them they send them back to be rented again. Just like the actresses who color their hair and put on make up for a role they add a few mods and a new paint job and that car looks completely different for it’s next assignment.
It’s Hollywood man, nothing is real!
